Banana Muffins (Egg Free)

These Banana Muffins are delicious, and... because they are made with applesauce instead of eggs, they are a nice treat for anyone with that particular food allergy/sensitivity! 

1 1/2 cups All Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1/2 teaspoon Salt
1/4 teaspoon Ground Cinnamon
3 Ripe Bananas, mashed
1/3 cup Butter, melted
1/4 cup Unsweetened Apple Sauce
3/4 cup Granulated Sugar
1/3 cup Brown Sugar, packed

Crumb Topping (Optional):
1/4 cup Brown Sugar, packed
1 tablespoon All-Purpose Flour
1/8 teaspoon Ground Cinnamon
1 tablespoon Butter, cold

Preheat oven to 375 degrees. 

In a bowl, combine flour, baking soda, baking powder, salt and cinnamon. 

In another bowl, combine mashed bananas, both sugars, applesauce and melted butter. 

Using a hand mixer, slowly add the dry ingredients to the banana mixture and blend together until  everything has combined.

Spoon the batter into a muffin baking pan with paper liners. 
Directions - Crumb Topping:
In a bowl, whisk together brown sugar, flour, and cinnamon. Using a fork, cut the butter to mix it in with the dry ingredients until it looks like crumbs. Sprinkle the topping onto each of the muffins.

Bake muffins in a preheated oven for 18 - 20 minutes (a toothpick placed into the center of a muffin should come out clean.) Let them cool and enjoy!
